Sukuti is a dried meat recipe usually made in the homes of all Nepalese during the special occasion of Dashain. During Dashain there is enough amount of meat in the home and the Nepalese people dried some amount of meat to make sukuti to enjoy it in the later days. This dish can be made from the meat from lamb, buffalo or goat. It is really easy and simple to make and we can make with any meat of our preferences. Sukuti can be made with or without mixing with spices according to your choice.

To make this dish, cut the meat into the long strips and remove all the fat from the meat. Place the strip in the bowl and marinate it with all the spices and store it in the fridge for about 24 hours. So that the meat can absorb all the spices into it. Take the marinated neat from the fridge and spread it on the clean cloth. Place the meat strips on the wire and hang those meat on the sun for about 5-7 days according to the intensity of heat. When the meat is dried you can store it in a place.
The sukuti can be enjoyed in different recipes. You can make pickle of the sukuti or you can fry the sukuti and eat it as the snack. You can add the sukuti in thukpa and chowmein. You can even made the stew of the sukuti by adding your choice of vegetables like pumpkin, bitter gourd, potatoes, beans.
