Thukpa is a Nepali style noodle soup with a fragrant smell. Thukpa is a popular noodle soup dish in the northern Himalayan region of our country. It is very simple to make and it is mostly enjoyed by the people during the winter season. Thukpa is the Tibetan word meaning in any soup or stew combined with noodles. Thukpa can be found in every restaurants and food stalls of our country. People can enjoy good quantity and quality of thukpa in the reasonable price. The Bouddha area is mostly famous destination for those people seeking the original taste of this dish.

INGREDIENTS for Thukpa

  • Noodles 1/2 packet
  • Carrot 1
  • Cabbage 1/4
  • Baby spinach
  • Ginger paste 1 tbsp
  • Garlic paste 1 tbsp
  • Red hot chillies 100 gm
  • Tomatoes 3
  • Pinch of szechwan pepper (timur)
  • Salt according to taste
  • Turmeric 1 tbsp
  • Cumin powder 1 tbsp
  • Any vegetable oil to fry vegetables
  • Lime juice 2 tbsp
  • Cilantro
  • Water 5 cups

DIRECTION

At first boil the water in a pot and add the noodles. Cook the noodles for about 5-8 minutes in a low heat. Turn of the heat and drained the noodles by using the strainer. Now put aside the cooked noodles and prepare the vegetables. Heat the oil in the pan and fry the carrots, chillies and tomatoes . Add the cabbage a little bit late so we can still get the crunchiness of cabbage. Add all the spices along with the garlic and ginger paste. Cook them for about 2 minutes and then add baby spinach at last . Add 5 cups of water and bring them to boil. Then after that add the cooked noodles and let it simmer for about 2-4 minutes. The thukpa is ready to serve. Serve the thukpa with dash of the lime juice and top it with chopped cilantro.

Thukpa is a really warm and easy dish. We can also add the varieties of meat and egg according to our taste and preference. It is the best dish to enjoy with our family and friends during the cold winter season.
