Lakhamari is a Newari sweet mainly made up of flour, butter and sugar. It is the special type of Newari sweet mainly prepare in the special occasion of the Newari community. Lakhamari is also the symbol of invitation card to the groom’s family provided by the bride’s family prior to the marriage. It  is also given as the gift to the guests in the marriage ceremony in some Newar subculture. Lakhamari are available in different shape and size according to the occasion. The common shape of Lakhamari that are available at every sweet shop is cylindrical.

INGREDIENTS

  • Flour 1 kg
  • Clarified butter 400 gm
  • Pinch of salt
  • Water as required
  • Sugar 3 cup
  • Oil for deep frying
  • Cardamom 2-3
  • Baking powder half table spoon
  • Half lemon

DIRECTIONS

First prepare the dough by mixing the flour with butter, baking powder and salt . Now slowly add the water as required to prepare the soft dough.  Leave the dough for about half an hour. During this period prepare the sugar syrup. To prepare the sugar syrup pour the 4 cup of water in a pan with 3 cup of sugar. Let them boil until the syrup becomes stick to touch and add the cardamom. Now pour the little bit of lemon juice to stop the syrup from crystallizing. Leave the syrup on low heat. Now roll the dough in cylindrical shape and cut the dough in small cylindrical shape. Pour the oil in pan, let the oil to rise in temperature. After that pour the dough on medium heat and fry until its golden brown. Brush the syrup completely on the lakhamari and leave it for few minutes. Lakhamari is ready to serve or you can enjoy for several days by storing it in airtight container.
